This is a Traditional Irish recipe. It takes four days to bake correctly as it is the fruit and almonds are soaked for three days in black tea before baking.

Tea Báirín Breac (meaning ‘Speckled Loaf’) is an old Irish recipe usually eaten at Halloween but great anytime. At home we would add various tokens into the mix such as ‘a coin’ (meaning fortune) or ‘a ring’ (meaning marriage) as a fortune telling game. But this is a rich, delicious fruit cake with a 200 year old history.

1/2 Loaf

Ingredients:  Water, Raisins, Flour (Enriched Wheat Flour [Niacin, Reduced Iron Thiamine Mononitrate, Riboflavin, Folic Acid], Malted Barley Flour), Dark Brown Sugar (Sugar, Molasses), Eggs, Almonds, Tea (Orange Pekoe and Cut Black Tea), Baking Powder (Corn Starch, Baking Soda, Monocalcium Phosphate), Cinnamon, Ginger, Nutmeg.
