A twist on the traditional Irish favorite and naturally dairy-free, this takes four days to make correctly!!! The fruits are first soaked in strong, black tea for three days before baking with a blend of spices. We use a blend of Bob's Red Mill Gluten Free Baking Flour and Cassava Flour.

Tea Báirín Breac (meaning ‘Speckled Loaf’) is an old Irish recipe usually eaten at Halloween but great anytime. At home we would add various tokens into the mix such as ‘a coin’ (meaning fortune) or ‘a ring’ (meaning marriage) as a fortune telling game. But this is a rich, delicious fruit cake with a 200 year old history.

Ingredients: Water, Raisins, Dark Brown Sugar (Sugar, Molasses), GF Baking Flour (Sweet White Rice Flour, Whole Grain Brown Rice Flour, Potato Starch, Whole Grain Sweet White Sorghum Flour, Tapioca Flour, Xanthan Gum), Cassava Flour, Eggs, Figs (Turkish Dried Figs, Water, Potassium Sorbate), Apricots (Dried, Pitted Apricots, Potassium Sorbate, Sulphur Dioxide), Organic Apple Cider Vinegar (Certified Organic Apple Cider Vinegar, Water), Tea (Orange Pekoe and Cut Black Tea), Baking Powder (Corn Starch, Baking Soda, Monocalcium Phosphate), Cinnamon, Ginger, Nutmeg.
